A deep, mellow, complex sparkling wine which derives its name from the extraction of white juice out of our black-skinned grapes from a single year’s harvest. A blend of 70% pinot noir, and 30% pinot meunier matured for more than five years on the lees (on the yeast) until we were happy that this wonderful expression of the Chilterns terroir was ready to be released.
