
Blog 24 Sushi wine pairings to launch Blanc de Noirs 2018
“Blanc de Noirs” refers to white wine made from black-skinned grapes. Careful pressing of our 2018 harvest extracted pale golden juice from our Pinot Noir and Pinot Meunier grapes.
The base wine takes around 6 months to ferment in tanks, and is then bottled with a temporary cap – which is when the magic starts to happen. Sugar and yeast added to every bottle generates millions of bubbles, smooths and mellows the flavours. You need patience though. Our Blanc de Noirs bottles were left for more than five years on the lees (on the yeast), with occasional riddling (turning) to redistribute the yeasty aromas before the dead yeast was disgorged. Delegates from all over the world who attended this year’s Pinot Noir Symposium in St Cross College Oxford were unanimous in their praise for Fairmile’s Blanc de Noirs.
Sushi in the vineyard
We are pleased to say that the wine is now available for general release, and to celebrate its launch we are inviting you to a wine & sushi pairing in the vineyard, where you will be able to taste our new Blanc de Noirs alongside our Blanc de Blancs 2017 and Founder’s Reserve 2015.
On 6th September 2025, in conjunction with Sakana Oxford, we are hosting two separate events in the vineyard, commencing 12:00hrs and 15:00hrs respectively.
The menu comprises:
Founder’s Reserve (2015): Squid with shiso (Japanese basil leaves)
Scallop with yuzu
Seared salmon with Yama wasabi
Blanc de Blancs (2017): Sweet prawns
Sea bream
Seared scallops
Tobiko (Flying fish roe)
Blanc de Noirs (2018): Hamachi (yellowtail) with shiso paste
Tuna
Salmon with ikura
Ikura (salmon roe caviar)
